Trail Mix Bites

Love chocolate? Love nuts? Love both ingredients together? Then you will love this easy recipe that I found on The Undressed Skeleton blog. Try this easy recipe today. You need little ingredients and less energy to make this recipe!

Place the bag of chocolate chips in a bowl, then place the bowl on the top of a pot. Put water in the pot and bring the water to a boil. The chocolate will melt.

Grab your trail mix.

This is what your melted chocolate chips will look like:

Take a spoon and place drops of chocolate on a pan that is covered with parchment paper. Before the chocolate hardens, place bits of trail mix in the chocolate.

Place the pan of chocolate bites in the fridge for about thirty minutes, so that they can harden.

Because Christmas is just around the corner, you could even replace the nuts with candy cane bits. You could really put anything you want in the chocolate! Whatever floats your boat! : )

Black Bean and Quinoa Burgers

I always wanted to try and make burgers without meat. Today was the day! I made Black Bean and Quinoa Burgers.

I am happy that I finally made these burgers because they were amazing!

I quickly ate a burger because 1, they were so tasty, and 2, I really wanted to come online and share this recipe with you!

The recipe is so easy to follow and you need little ingredients. It is a great substitute for meat, too!

Ingredients:
-1 can of black beans, rinsed and drained
-1/4 cup of quinoa
-1/2 cup of water
-1/2 cup of bread crumbs
-1/4 minced green pepper
-2 tablespoons minced onion
-1 large clove of garlic, minced
– 1 1/2 teaspoon ground cumin
-1/2 teaspoon salt
-1 teaspoon hot sauce
-1 egg
-3 tablespoons olive oil

Directions:
1. Bring the quinoa and water to boil. Reduce heat to medium-low, cover, and simmer until quinoa is tender and the water has absorbed, about 15-20 mins.

2. Roughly mash the black beans with a fork, leaving some whole black beans in a paste-like mixture.

3. Mix the quinoa, bread crumbs, bell pepper, onion, garlic, cumin, salt, hot sauce, and egg into the black beans using your hands.

4. Form the black bean mixture into five patties.

5. Heat the olive oil in a pan.
6. Cook the patties in the hot oil. Cook for 2 to 3 minutes on each side.

Fish Cakes

An original recipe coming right up!

On the menu tonight: Haddock Fish Cakes!

For this recipe, I did not follow a specific recipe. I just put together ingredients that looked right.

Here are the following ingredients that I used:
– 3 potatoes
– 3 fillets of haddock
– 1 clove of garlic
– olive oil
– salt, pepper, parsley
– dijon mustard
– lemon shavings
– 1 egg
– flour

This is what I did:

#1 Boil the potatoes
#2 Fry garlic, lemon shavings, and parlsey in oil.

#3 Cook the haddock in the oil, garlic, lemon, and parsley. Cook the haddock for about 5 minutes.

#4 Once potatoes are cooked, mash. *Add milk and butter, if you wish.

#5 Add the haddock, 1 tbsp of dijon mustard, and 1 whisked egg.

#6 Fry onions to add to the mix.

#7 All of the ingredients are ready to be mixed. Add salt. (Your preference as to how much).

#8 Put flower on a place.
#9 Create patties with the ingredients and then place into the flour. *This will help the patties stay in place.
#10 Fry the patties in the oil until golden brown.

**Creating the patties were a very sticky process, hence my fish cake cavered hands in this picture.

Voilà! The finished product!
They were very tasty ….and 3 potatoes and 3 fillets made 8 small patties. Enjoy! We did! : )
